I saw a post for snow cream somewhere last year.  I had never thought of doing this before but when we had that surprise snow storm April 7, 2017,

 

We took the opportunity to gather fresh snow off the trees and make a vegan version, and top it with some maple taffy from the maple syrup we had made.  It was a good way to help the children enjoy the last bit of winter, and I am thankful it didn’t last long.  Here Eva was still just a cute little puppy.

She’s not so little now, but she still loves the snow every bit as much.

With this last snowfall I have seen a lot of cute sayings going around online.  I was joking with my friend about having to get a new saying for April, and when she emailed me a cute picture of a snowplow and I think it said April showers? bring snow plowers.  Another friend said they saw Spring loading….fault…fault.. no spring available in your area.  I think we have all had enough of winter, and if we don’t laugh about it I think we might cry.  It has been a very serious winter storm for many with the freezing rain being followed by sticky snow, the trees are having a hard time not breaking under the weight.  I have personally heard a few go already.

I am glad we took the time in the last few years to clear a lot of the trees that could fall on or around the house, but I will definitely not be wondering around too much in the woods today,

just enough to gather some fresh snow.  It’s a great day to stay inside and curl up to the fire (if you have one) and make some snow cream, it might be your last chance this year.  WE CAN HOPE ANYWAY 😉

 

One thing about this recipe is it melts fast, so be prepared to work quickly,

here’s what you need:

fresh snow (I like to use the stuff still on the trees, I have lots of animals 😉 gather a large bowl to make sure you have enough to make the snow cream the right consistency.

Full Fat coconut milk (I like to use Real Thai in the black tetra pack)

Stevia (I like to use NOW Better Stevia Powder) or other sweetener to taste, everybody is different.

Vanilla extract ( I like to use Simply Organic non-alcoholic Vanilla Extract)

We chose to top this with Maple Taffy (which is essentially maple syrup boiled down a little longer) but you can top it with whatever you want, strawberry sauce, carob sauce, chopped peanuts, sprinkles, the sky’s the limit.

 

If you are topping this with maple taffy you will want to get this ready.

Collect a large bowl of fresh snow.

In another large bowl mix vanilla, stevia (or other sweetener) to taste and coconut milk.  Stir in the snow until it is stiff enough for your liking

Scoop into bowls

Top with your choice of toppings and enjoy!

Remember when life gives you lemons, make lemonade.  When life gives you snow, make snow cream.

What will you be doing with the recent abundance of snow.  For children who never seem to get enough of the white stuff, this is a last chance to go sledding, throw a few snowballs or make a snowman and see how fast he will melt.  As for me, I’ll be glad to work in the greenhouse today instead of outside.

At least in here there is actually the promise of May flowers.

  1. I had never heard of this before – it sure looks yummy. This would surely be nice to do with children. Your photos are beautiful – especially the one with the ice on the trees by the fence. Picture perfect.
